Mint Patties!

Don'tcha love them?! I love, love, love minty things. Peppermint patty ice cream, sweet mint gum, York patties, Pearson's mints, toothpaste, Lifesaver's spearmints...
My boss bought some of these mints (below) and I could not stop eating them. So, I bought a bag for myself. Cam and Elena shared them with me, but I took the rest home because I am not that generous. I've always been a mint person, but even as I've gotten older and my tastes have changed, this one specific item has remained a favorite.




Ingredients

  • 3 1/2 cups confectioners' sugar
  • 1 cup margarine
  • 3 tablespoons corn syrup
  • 2 drops peppermint oil

Directions

In a medium bowl, cream together confectioners' sugar and margarine. Blend in corn syrup and peppermint oil. Adjust peppermint oil to taste. Chill 30 to 60 minutes, until firm enough to form into patties.
Shape into balls or patties and chill again for 30 minutes more. Eat as is or dip in melted chocolate and chill again before serving.
